I am still recovering from a weekend of wonderful dining! Bart and I had two spectacular dinners. On Saturday night we had a menu that included Chinook springer salmon that was grilled with a dry rub of curry, coriander, and chili powder. That was accompanied by some parmesan couscous, and a medley of roasted vegetables, including baby carrots, baby squash, and baby potatoes. Sunday night we had another fantastic meal that consisted of fish tacos with grilled tombo tuna, a nice salad of red leaf lettuce, red cabbage, carrots, and tomatoes with a basic vinaigrette, and a delicious mango and avocado salad with lime juice. There is almost nothing more satisfying than a good meal and someone to share it with!
